Jim’s Thanksgiving Sweet Potato Recipe
Ingredients:
- 6 sweet potatoes
- ¼ cup sweet butter
- ¾ brown sugar
- 1/2 tsp of kosher salt
- Grated rind of lemon
- ¼ teaspoon ginger
- 2 tablespoons lemon juice
Optional
2-4 tablespoons dark rum, 3 tablespoons chopped pecans
Instructions:
- Cook Sweet Potatoes in boiling water 15 minutes to fork tender b
- Preheat your oven to 350 degrees F . butter a baking or casserole dish.
- Cut the sweet potatoes into long, thin strips, about a quarter-inch wide and three inches long. Lay strips into the baking dish.
- Melt the butter, mix in kosher salt, lemon, sugar, ginger, lemon juice and optional rum if desired.
- Pour over the sweet potatoes in the baking dish
- Sprinkle nuts on top if desired.
- Bake in the preheated oven for about 30 minutes, or until they are tender and slightly browned at the edges, baste twice.
- Remove from oven and serve hot as a side dish.
